Bacon Guacamole Deviled Eggs

It’s Game Day and this year’s Super Bowl Sunday definitely has a different vibe than previous years due to a little thing called the pandemic. I’m not going to lie, I don’t really care about who wins between the Chiefs or the Buccaneers (even though I’m wondering if Tom Brady will win another Super Bowl?!) but I do care A LOT about the food. This pandemic might be a big Debbie Downer and trying to ruin everything with its restrictions but I plan on still celebrating in my own household with some delicious keto treats! This recipe was something I came up with when I had a small get-together at my house recently and I was struggling to come up with something that fit everyone’s needs. The recipe had to be keto and budget friendly for myself, Whole 30 compliant for my brother as well as no mayo for my sister-in law… tall order! Of course it also had to be delicious and full of flavor, duh!

Eggs are one of the cheapest ingredients that you can use while watching your budget and they are a keto gold mine of healthy fats and protein without breaking the bank. Recently, I had a ton of eggs given to me by a wonderful co-worker (beautiful farm fresh brown eggs) and I wanted to use them in some way for my intimate get-together. One of my favorite things to make are some deviled eggs but these couldn’t be just any old deviled eggs, these needed to be elevated ones.

Now normally my classic deviled eggs have mayo in them but that had to be changed and in a way that still allowed the eggs to still be creamy. Which brings me to the conclusion that avocados are *magically* because they are totally perfect in this recipe and give the filling the perfect creaminess that deviled eggs are known for. The only difference with using the avocado instead of the mayo is that your eggs will turn brown so you can’t make them too far ahead of time otherwise they won’t look as pretty. Now these were a HUGE crowd pleaser with my little party and we devoured them with big sighs of satisfaction. Best part was having no guilt after eating several because it was well within my lifestyle! Bacon Guacamole Deviled Eggs

This recipe is the perfect trifecta of Keto goodness with the use of eggs, avocado, and bacon and a fun twist on a traditional appetizer that is delicious, healthy, and won't derail your lifestyle. These deviled eggs are easy to make and are sure to be a big hit at your next get together.

Ingredients

  • 12 Hard boiled eggs, peeled
  • 2-3 slices of cooked Bacon, chopped
  • 2 ripe avocados, pitted
  • 1/4 cup fresh cilantro, finely chopped
  • 3 tbsp. of lime juice
  • 2 Cloves Fresh Garlic, finely minced (I use a press)
  • 1 Jalapeno, finely minced and deseeded (do 1/2 if you want less spice)
  • 1/2 tsp Chili Powder
  • 1/8 tsp Smoked Paprika
  • 1/8 tsp Cayenne Pepper (optional for added spice)
  • 1 tsp salt

Directions

  1. Preheat your oven to cook your bacon at 400 degrees and get your water boiling for your eggs. Pro-tip for the eggs, add salt and a splash of vinegar to the water before adding your eggs. Also don’t add the eggs right from the fridge because the shells have a tendency to crack. Put the eggs in some lukewarm water while you wait for your water to get to a rolling boil so that they stay intact. Once you add the eggs, let them cook for 15 minutes and then place them immediately into an ice bath. Once they have cooled down enough to be handled, they can be peeled and you will notice that they slip right out of the shells!
  2. While you are cooking your eggs, place your bacon on a foil lined cookie sheet (with a lip) and put it into the oven. Your bacon will cook for about 18-20 minutes depending on the thickness of the cut. Also make sure to watch it the last couple of minutes, you don’t want your bacon TOO crispy just the consistency to be on the crunchier side so that its the perfect texture for the top of your Deviled Eggs. Once the bacon is done, place it on a paper towel to drain and cool down and then place it to the side.
  3. Slice your peeled eggs in half lengthwise and place your egg yolks in a bowl and your whites on a sheet or the dish you want to serve them on. Add in the avocado, cilantro, lime juice, garlic, jalapeno, and spices to your egg yolks and mash it together with a fork or you can blend it in a food processor for a smoother texture.
  4. Once it is thoroughly blended, put the mixture into a ziplock bag and cut the tip off so you can pipe it into the center of the egg whites and generously fill each one. You can also use a spoon for a more rustic look or a pastry bag if you have one available to fill the egg whites as well.
  5. For garnishment, top with the chopped bacon, cilantro, and a dusting of some smoked paprika. Serve immediately and enjoy!


This recipe is best served right away because the avocado will cause the eggs to start turning brown. If you want, you can top it with a little lime juice to help with the browning process.
